The basic prerequisite to guarantee the excellence of the product is the exclusive use of Bluefin quality Mediterranean tuna (Thunnus Thynnus) or bluefin tuna from tonnara. Only the most noble parts are selected for our craftsmanship: the tuna is steamed, canned in large containers and, as a fine wine, subjected to seasoning. Then the tuna is canned in smaller containers, covered in olive oil and left to ripen.
